Pumpkin bread

The loaf of banana bread left us too quickly. This weekend, it was pumpkin bread on the chopstick rack. This could become a weekend tradition - well, the throwing of something in the oven that smells good while housecleaning, not pumpkin bread every week.

I basically halved a recipe from allrecipes.com, but used 2 eggs, dark brown sugar instead of regular sugar and extra spice. The wife liked it more than the banana bread. I concur.

1/2 cup butter or margarine
1-1/2 cups sugar

1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg

2 eggs
1/2 (16 ounce) can solid pack pumpkin (that's 8 ounces for the mathematically challenged)

Preheat oven to 350 F.

Cream butter and sugar. In a separate bowl, put all the dusty stuff together and mix well. Stir in eggs and pumpkin and mix well. Fold in the butter/sugar mix. Bake in a greased 9x5 loaf pan for 1 hour. Remove. Cool in pan for 10 minutes, then place on cooling rack, until you cannot resist it any longer.

Allrecipes is probably my favorite recipe website. Cooksillustrated comes in second, but it requires an annual fee to be paid. I guess great minds think alike.

Depending on my mood, I switch between allrecipes.com and epicurious.com.

I briefly browsed cooksillustrated.com. I am not ready for that. That's like moving from being bartender to restaurant manager (sorry, just watched the movie "Waiting...")
